2016 was a magical year for us, we left the UK, moved to Australia and along the way managed to tick off 12 new countries! It was really hard to narrow all the incredible experiences we had down to just 10 but somehow we managed to and can't wait to share them with you all! 2017 will be a different year of travel for us, we won't be ticking off 12 new countries as we're now living Down Under but look forward to visiting at least 12 new destinations in Australia and can't wait to share all our Aussie adventures, both luxurious and adventurous with you! We're also moving into our own place in a few months and can't wait to show off our humble abode and also share all the details of our upcoming WEDDING and honeymoon!

During our years living in the UK Dan would always talk about how he wanted to get a hammock when we moved to Australia. It's been a couple of years since I've worn a watch and so when JORD Wood Watches recently reached out to us for a collaboration and giveaway I had one look at their beautiful watches and happily accepted! I had a few luggage issues on my recent trip in Europe and found myself struggling to find a decent replacement as I dragged a suitcase with a broken wheel through the Balkans. I'm a huge Harry Potter fan... just like 99% of the population. I've seen the movies more times than I can count, I've read the books so many times they literally fell apart, I've drank butterbeer on two continents and I know way too much about the characters, the books and the films. Iceland is a Nordic island country which is filled with sharp contrasts. Fire and ice still battle an age old war, its dramatic landscapes are dotted with volcanoes, geysers, waterfalls, hot springs and lava fields, it has the biggest glacier in Europe and the Northern Lights dance in the skies for eight months of the year. Iceland is truly one of the most magical countries on earth and is a destination that has for as long as we can remember been on our bucket list. Whilst we won't be visiting for a couple of years now we've relocated to the Southern Hemisphere we have put together our Iceland Bucket List which will hopefully inspire others to explore all this incredible island has to offer.

It's no secret that Australians do brunch better than anywhere else in the world and whilst living in the UK I really missed weekend brunching in the sunshine. Since settling back in Port Macquarie Dan and I have made it our mission to try as many of the fantastic cafes and restaurants in town so that we can honestly tell you the very best places to dine if you are planning a trip to our beautiful beachside town. Also, we absolutely love food and dining out and it hasn't taken me long to convert Dan into a brunch lover! Last Sunday was a beautiful day and after a morning at the beach we decided to try Four Espresso's brunch and coffee and were delighted with our choice!

The last weekend in October saw the Tastings on Hastings festival returned to Port Macquarie and saw our beautiful, coastal town filled with three action packed days that would delight any food lover! Tastings on Hastings is the regions premier food festival which showcases our regional farmers, artisans, food producers, wine growers, brewers, restaurants and cafes. It was a fantastic weekend that saw almost the entire community out and about, enjoying the sunshine, supporting local businesses and indulging in delicious cuisine!

After two years living in England it was time to say goodbye to the UK and hello to a European Spring and Summer before we jetted across the world to start our lives in Australia. Dan and I aren't city people, don't get us wrong we love visiting cities but more often than not we get in, sightsee like crazy to visit all the main attractions and get out. We much prefer visiting remote regions which can include anywhere that is beautiful and not too busy! Some of our favourite holidays have included alpine escapes, gorgeous cabins in the mountains and escaping to the countryside. After these trips we always daydream and talk about moving to the middle of nowhere to start our lives living off the land and enjoying the peace, quiet and natural beauty of nature. Dan sometimes gets really carried away and whilst I am not a city person and there is a lot of things I'd love, there are still some things I would really miss if we lived in a remote region. We were inspired by the Flogas #IWouldMiss Campaign to share how we would survive in a remote region, what we'd miss, what we'd enjoy and also our favourite travel experiences in remote regions!

If you're a regular reader of our blog then you'll know that last June we got engaged and since we arrived back in Australia a few months ago we've been planning like crazy! One of the biggest and most exciting parts for us, other than the wedding is of course our honeymoon! Dan and I have been lucky enough to have travelled extensively and have visited almost 30 countries in the last few years together and so choosing a destination for our honeymoon isn't the easiest decision! After a lot of to-ing and fro-ing I think we've finally decided on Indonesia and we can't wait to share how we are thinking of spending our honeymoon in this incredible country!

We were lucky enough to have a long weekend within the first few months of arriving back in Australia and we tossed up between having a weekend away or spending our long weekend at home. We decided to spend the weekend at home enjoying our beautiful home town, Port Macquarie! Despite how many countries, cities, islands, towns and beaches we've visited during our travels, Port Macquarie is still my favourite place in the world. The weather really turned it on for us too with beautiful, sunny days, warm water and plenty of whales passing by!

Last Sunday was the Port Macquarie Beer & Cider Festival and the organisers literally couldn't have ordered better weather for the day! Set against the gorgeous backdrop of the beautiful Hastings River, Westport Park was transformed into a family friendly festival with the aim to "celebrate all the good things in life; beer, cider, food, games and music" which it certainly did!

Within a few weeks of arriving back in Australia after two years of living in the UK and a few months exploring Europe we were finally settled in and finally over our jet lag! Jet lag is really no fun at all and the jetlag we experienced this time was the worst we had ever experienced. We put it down to the fact that it was because our bodies weren't just in 'holiday mode' but were completely used to the UK time zone and just needed the time to readjust to our new Australian time zone. We had arrived back towards the end of Australian winter and so decided to head North to the Gold Coast for warm weather, plenty of beach time and a few nights of relaxation!

One of our favourite ways to explore a new destination and get to know it is through food! Sometimes however this is a little easier said than done and it can be difficult to get off the tourist trail and find the best places to eat! I very quickly fell in love with New York City when I visited in 2012 and can't wait for my next visit, especially now that we've both released our inner foodies through our travels over the last few years. During our stay in Athens at the Herodion Hotel we spoilt ourselves with an incredible dinner at POINT a, the elegant roof top bar and restaurant which is located on the 5th floor of the hotel. It was our final night in Europe before we were flying back to Australia and I couldn't think of a better way to spend our evening than indulging in delicious Mediterranean cuisine, sipping on unique, delicious cocktails and enjoying an uninterrupted view of the Acropolis and Parthenon.

We only had two short nights in Athens on our recent visit and so wanted a hotel that was luxurious as well as being centrally located to all the main sites. We couldn't have been happier with our choice of hotel, the Herodion Hotel which was ideally located just a few steps from the Acropolis and Plaka and adjacent to the new Acropolis Museum in the very heart of Athens historic centre. The Herodion Hotel is a stylish, first class hotel with a contemporary look that contrasts to its ancient and historic environment. Whilst it's no secret I am a fan of all things luxury and comfort, I still enjoy a good camping trip! By the time we arrived in Mykonos we had truly fell in love with the Greek islands after our two weeks soaking up sunshine and culture on Kos, Santorini and Paros. Mykonos is one of the most glamorous islands in Greece and has the reputation as the wild child of Greece with its party reputation! We spent just two nights on Mykonos and spent most of our time relaxing by the pool at our hotel, the very beautiful Tharroe of Mykonos, exploring the whitewashed Cycladic streets of Mykonos Town, admiring the iconic Windmills, drinking cocktails and dining seaside at Little Venice, it was an unforgettable stay on an unforgettable island.

At the end of my first year of University, three friends and I decided to go backpacking around South East Asia for our summer holidays. We had planned the most incredible trip throughout the year, saved like crazy and finally a few days after Christmas flew out to Thailand to begin our travels through Thailand, Laos, Vietnam and Cambodia. We very quickly fell in love with Paros and loved exploring this gorgeous island in depth during our time there. The third island on our Greek Island hopping itinerary was Paros, a gorgeous island boasting sandy beaches, charming villages and beautiful landscapes. We were staying at the gorgeous Astir of Paros and spent our days exploring the island in our cute little AutoParos Suzuki! Paros is located in the heart of the Aegean Sea and has something for everyone! We loved the traditional villages of Naoussa, Parikia and Lefkes which are wonderful examples of Cycladic architecture with whitewashed Greek houses, paved streets and blue-domed churches that ooze charm and beauty. Paros has unrivalled natural beauty with its golden sandy beaches, crystal clear waters and breathtaking landscapes. Paros is also famous for its white marble where most famously, the Venus de Milo and Napoleon's tomb were carved from marble sourced from the island! Paros is one of the quieter of the Cyclades Islands and is the ultimate Greek Island paradise, we loved every moment of our time here and it was one of our favourite of the magical Greek islands!

Santorini has always been at the top of my bucket list. It has been ever since I first saw a photograph of this picturesque island with its white buildings built into the sides of cliffs, its beautiful blue domed churches and the gorgeous blue water of the caldera that meets the endlessly blue skies. Santorini is romantic, charming, beautiful... it is everything I had hoped and more. We spent our days strolling Oia, relaxing in our gorgeous cave hotel, cruising around the island on Quad bikes and finishing our days with unforgettable sunsets and bottles of fantastic local wine. Our time on Santorini was so perfect that it almost feels like a dream.

Santorini has always been at the top of my bucket list. Ever since I first saw a picture of those picture perfect white towns dotted on the cliffs, the beautiful blue domes, the awe-inspiring caldera and the romantic cave hotels with infinity pools. It is not often that you visit a place you've always wanted to and it is even better than you could have possibly imagined and I'm happy to say that Santorini exceeded all my (very high) expectations, I truly fell in love with this picture perfect, romantic, beautiful island. Our stay on Santorini was made perfect by our incredible stay at Nostos Apartments in Oia and it was one of the most beautiful, magical places we've stayed in all our travels and truly made our time on Santorini unforgettable.

After a busy 24 hours in beautiful Pamukkale and Hierapolis we arrived in Bodrum late afternoon. Bodrum is known for its year round hot temperatures, flashy international marinas, pumping nightlife, elegant shopping boutiques, top dining establishments and many other experiences which attract people to this vibrant harbour city! Bodrum is a beautiful city with white buildings that ooze charm and an incredible amount of history which add a fantastic dimension to this otherwise resort city. Bodrum is home to a 15th century Crusader castle, the world class Museum of Underwater Archaeology, and the Mausoleum of Halicarnassus which is one of Seven Wonders of the Ancient World!

Pamukkale is a destination which has been on my bucket list ever since the first time I saw a photo of the so called 'Cotton Castle' in Turkey. It is located an hour from Aphrodisias and is a world famous site with 17 incredible natural thermal springs with calcite-laden waters that flow from 520 ft high cliffs! Pamukkale is made up of carbonate mineral forests, petrified waterfalls and a series of terraced basins which create a surreal and unique icy-white landscape that is truly breathtaking! It is a pretty incredible experience to tick a destination off that has been on your bucket list for as long as you can remember and I am so grateful to Neyzen Travel for allowing us to do just that!

The next leg of our Turkey land tour with Neyzen Travel took us to the awe inspiring ancient site of Aphrodisias where were marvelled at the largest and best preserved ancient stadium in the world! Aphrodisias was also the location of a sculpture academy which was famous throughout the ancient world and where a large number of statues in remarkable condition have been discovered! We were so lucky to have Aphrodisias almost all to ourselves as it is one of the quieter ancient sites in Turkey but we certainly think it is one of the best and would highly recommend adding this amazing site to your Turkey itinerary!

I've always loved history and been fascinated to discover and read about ancient civilisations and their people. Coming from Australia which is still a very young country it is often hard to comprehend ancient cities and sites that are thousands of years old and without a doubt the best way to try and understand is to visit these incredible places in person. Ephesus is a place that has fascinated me since I first saw a picture of its iconic library and read about the people who lived here. We only had a few must-visit destinations for our Turkey itinerary and Ephesus was one of them and it was even more impressive than I had imagined! Our next stop in Turkey on our Neyzen tour was the ancient site of Assos which is less than an hour south of Troy! Ancient Assos is located at the top of a hill surrounded by olive groves, charming stone buildings and crumbling city walls and boasts spectacular views of the Aegean Sea and the Greek island of Lesvos! Assos is an amazing site that in addition to its spectacular views and interesting history also is an archaeologists dream with fascinating ruins and fragments of ancient pottery scattered throughout the entire site waiting to be discovered!

Neyzen Travel have taken us to the very best of Turkey's ancient sites during our time in this wonderful country. Some have been the very popular, must visit sites whilst others have been incredible lesser known sites that you'd only manage to visit if you were travelling with a local. We've been more and more impressed everyday and they truly live up to their motto of 'Turkey by Design'. Today we visited the incredible, well known site of Pergamon and also the lesser known Asklepion. Pergamon is an enormous ancient city that has both the steepest amphitheatre in the ancient world along with the second largest library in the ancient world whilst Asklepion is an ancient healing centre that was dedicated to the serpent god Asklepius.

After a few incredible days exploring Istanbul and an unforgettable day discovering Gallipoli our next stop on our Neyzen Travel itinerary was the ancient site of Troy! Most people only know about Troy from the movie but I learnt all about it both at school and at university and so to visit and explore the site with literally no one else around was such an incredible experience. The site of Troy was the home to a number of civilisations for more than 4,000 years and what remains today is a truly remarkable insight into the history of these civilisations!

As an Australian we learn about the Anzac's and Gallipoli Campaign from a very young age and for as long as I can remember I have felt the need to travel to Turkey to understand exactly what happened here, learn just how this shaped our very young nation and to pay my respects to the thousands of Australians and New Zealanders who gave their lives here. During the eight month campaign around 100,000 allied and Turkish soldiers were killed and now lay beneath the today peaceful lands and beautiful sandy shores of the Gallipoli Peninsula. Today the Gallipoli Battlefields are silent and preserved as a national park with marble and bronze monuments dotted throughout it and it is one of the most emotional and moving places I've ever travelled to. We are very grateful for Neyzen Travel who helped us to arrange our visit to Gallipoli to pay our respects and for organising us a perfect guide to help us learn and understand the history.

After two months of travelling we've just arrived in Turkey, our second to last country of this trip and are really excited to be here! The Times and The Sunday Times launched Insider City Guides in late March 2016, bringing together the expertise of the travel teams from The Times and The Sunday Times with the help of city-break experts at The Sunday Times Travel Magazine. We visited Barcelona in April and fell in love with the culture, city and of course food! If you are a regular reader of our blog then you'll know that we took a tapas tour which we absolutely loved and so were very excited when we discovered that as part of their guide to Barcelona, Insider City Guides recently published a fantastic article featuring five of Barcelona's top tapas bars! They then teamed up with Donal Shehan, the celebrity Irish food writer, cook and TV presenter who inspired by these top tapas bars created three tapas recipes which he presents in a 4 minute video which you can easily whip up at home in the kitchen! Donal's recipes are inspiring and accessible for the everyday home cook and he has over 375k YouTube subscribers! We're super excited to share three of these fantastic tapas recipes with out below that I am sure you will love!

During our recent visit to Sarajevo we booked our stay at Villa With The View, an amazing apartment located in a quiet, residential neighbourhood only a 20 minute walk from the Old Town and main places of interest in Sarajevo. Our apartment was elegant, beautifully styled and very comfortable and its location on a small hill overlooking Sarajevo meant that it offered what we believe to be the best views of the city and surrounding areas! Our hosts, the Teletovic family moved to Australia when they were 18 years old due to the aggression in Bosnia and Hercegovina. They lived in Australia for 17 years and a few years ago returned to Sarajevo with their two boys. They were amazing hosts and it was incredible to hear their stories and experience Sarajevo as a local in one of their beautiful apartments.

We're currently travelling through the Balkans on a fairly tight and busy schedule and we really like to fit as much in as possible in each destination. When it came time to travel from Budva to Sarajevo we were a little stuck as there was very limited public transport options and they were very, very long journeys which would take up a lot of our precious travel time. As we were researching all our options we discovered Kiwitaxi, a company that offers private transfers all over the world and much to our surprise and delight offered transfers in Montenegro and transfers in Bosnia and Herzegovina as well as taxis in Budva! The booking process was smooth, quick and simple and the transfer was comfortable and affordable as well as saving us a lot of time!

We recently spent a very short but sweet four days in Montenegro. Before we arrived we hardly knew anything about this small country in the Balkans and didn't mind that we only had four days as it was more time than anyone we know has spent there. The moment we crossed the border from Croatia we knew we'd made a mistake by booking only four days as Montenegro is drop dead gorgeous! We spent two nights in gorgeous Kotor where we hiked up the fortress and the mountain behind it. The fortress was incredibly impressive and the hike was amazing and offered the most gorgeous views of all of the Bay of Kotor! We got stuck in a torrential downpour of rain at the top of the mountain which saw the path turned into a stream and saw us hanging out with some mountain goats under shelter. I wish there was photographic evidence but it was literally raining cats and dogs and we didn't want to risk drowning our nice DSLR camera, so we'll just have to keep that as a memory. From Kotor we spent two nights at beautiful Budva staying at the luxurious Splendid Hotel where we had a mini "holiday from our holiday" and literally spent two days lying on the beach, swimming in the sea, eating excessive amounts of food and lounging by the pool between visits to the spa and sauna. We were bad tourists in Budva but after two months on the road we welcomed this relaxing break with open arms. On our final day in Montenegro we had a transfer from Budva to Sarajevo which took us through the very heart of Montenegro past Sveti Stefan and the beautiful coastline up through the mountains and along beautiful Tara Canyon and Lake Skadar. It was during this drive that we truly fell in love with Montenegro's stunning, unspoilt natural beauty and without even discussing it we knew that we hadn't truly experienced or ticked Montenegro off our bucket list. It is still firmly on the list and we can't wait for the opportunity to return one day and give this gorgeous country the time it deserves! x
