The venue for the ultimate Scottish whisky experience is The Scotch Whisky Experience which is located on the historic Royal Mile in the heart of the city. The Scotch Whisky Experience has been educating, inspiring and creating Whisky lovers from all over the world. We signed up for their Gold Tour which took us on a guided visual, interactive and sensory experience from learning about the history and production of whisky to discovering the ins and outs of whisky tasting and finally tasting whiskies from the main whisky producing regions in Scotland. It was the perfect welcome to Edinburgh and introduction to Scottish Whisky!

We've just returned home from an incredible trip to Scotland, my final country in the UK to visit. Our first stop was the Scottish capital, Edinburgh where we stayed at the iconic, luxurious G&V Royal Mile Hotel. The G&V Royal Mile Hotel is wonderfully located in this gorgeous city and has the incredible accolade of being the only five-star hotel on the historic Royal Mile, the most iconic street in Edinburgh. Last weekend we stayed at The Grand Eastbourne for a romantic Valentines weekend. Eastbourne is a large seaside resort which has an enchanting mix of classic Victorian architecture, natural beauty and English heritage ensuring it is one of the UK's favourite seaside destinations. The hotel is ideally situated on the seafront in Eastbourne and commands breathtaking views of the sea and the dramatic cliffs at Beachy Head. The Grand Eastbourne is one of Eastbourne's most iconic landmarks and also has the incredible accolade of being the only 5-star luxury hotel on the British coast! The hotel is elegant, luxurious and timeless and our weekend was absolutely perfect and everything we'd hoped it would be.

Switzerland is without doubt one of the most natural, breathtakingly beautiful countries in the world. We spent our second anniversary exploring this gorgeous country in November and were lucky enough to arrive for the first heavy snowfall of the season! We absolutely fell in love with Grindelwald and the Jungfrau region, visited the Jungfraujoch Top of Europe attraction and ate our weight in cheese fondue and chocolate whilst exploring beautiful lakeside Lucerne. We loved Switzerland so much that we altered our 2016 European travels so that we could come back and spend a week exploring more of this beautiful country. Whilst researching our holiday to Italy's Amalfi Coast we stumbled across a hike called the Il Sentiero degli Dei which is also known as the Path of the Gods. Spending a day hiking the Path of the Gods is truly one of the best ways to experience the breathtaking natural beauty of the Amalfi Coast, something that everyone needs to see during their lifetime. The Path of the Gods was a highlight of our trip to Italy and we loved the physical challenge of hiking where we were rewarded time and time again with the most magnificent panoramic views of the sea and coastline, sheer cliffs and almost vertical vineyards & terraces. We still love to talk about hiking the Il Sentiero degli Dei and the magnificent views we experienced and surely will never forget.

One of our favourite ways to experience a new country is by hiring a car and exploring at our own pace. We love the freedom and flexibility that we get from a car as we have the ability to get off the beaten track and see as much as possible. It has been a long time since our last road trip which was around the West Coast of Ireland in May with my parents who were visiting from Australia. We visited Switzerland for our anniversary in November and spent the most perfect few day exploring the Swiss Alps on our road trip.

Dan & I met and fell in love whilst travelling around South America in late 2013. A few months later I said goodbye to Australia with a one way ticket to London, a UK working visa and almost 50 kg of luggage (thank you Emirates for your generous baggage limits). It was like a fairytale and I had also always wanted to move to the UK but being from opposite sides of the world meant we had to discuss fairly early on where we wanted to end up if our relationship was to work! We discussed it a lot earlier than most couples I'm sure but decided that ultimately Australia was where we wanted to settle. We were lucky enough to apply for Dan's partner visa from the UK and have it approved in just over six months and so we wanted to share our visa story in the hope it assists others who are going through the same experience.

After a magical stay in Grindelwald we knew it was going to be tough for any destination to compare but luckily we were booked in for a night at Hotel Schweizerhof Luzern, one of the most luxurious, elegant hotels in Switzerland and it certainly did not disappoint! We fell in love with Hotel Schweizerhof which was perfectly located in central Lucerne and offered the most stunning views over Lake Lucerne, the snowcapped Alps and city. The hotel epitomises elegance and luxury and we really enjoyed learning about the historical aspects of the hotel which it prides itself on.
